Tomato Sandwich

Crunchy toast, juicy tomato, minty basil - this is one of my all time favorite sandwiches. I don't eat a lot of mayonnaise elsewhere, but here just a touch adds a je ne sais qua. Actually, I do know...

Method:

Toast two slices of your favorite bread. Slice a fresh local tomato. Spread one slice of toast with a thin layer of mayo (optional), top with tomatoes, sprinkle with salt & pepper, and top that with basil leaves. Cover with the other slice of bread, and take a crunch-juicy bite. Summer is a long time coming, but this makes it worth the wait.

  2. This is on the top 10 favorite foods list. But of course they have to be fresh tomatoes.
