Potato Peel Pancakes

Call me obsessive, but I hate to waste good, nutritious organic produce. Here's one tasty use for potato peels.

Prep time: 10 minutes
Cook time: 10 minutes
Yield: about 8 cakes, or enough to serve 2

Peels from 8 organic potatoes (scrub those potatoes before peeling!)
1 onion, coarsely chopped
3-4 fresh sage leaves, or 1/2 tsp dried
Salt and freshly ground black pepper
2 eggs
2-3 TB whole wheat flour if needed
Olive or canola oil

Using a food processor equipped with the cutting blade, process the peels, the onion, the sage, salt, and pepper to a coarse consistency where the pieces are about the size of rice grains. Add the eggs and pulse to create a thick dough. Add a bit of flour and pulse to absorb any extra liquid.

Heat the oil in a large heavy skillet over medium heat, and place 1/4 to 1/3 cup of the mixture at a time in the skillet, shaping into a circle with your scoop. Cook for 3-4 minutes per side, or until crisp and browned.

Serve with butter or sour cream.

Caveat: Only use organic potato peels!
